KeyKey is a minimalistic touch typing tutor for Mac. Doesn't automatically capitalize the letter at the beginning of a sentence either. The built-in iPhone keyboard is, for the most part, fine. It isn't correcting/adding grammar at all - so when I want to type "I'm" it doesn't add an apostrophe and auto corrects it to "in" instead. iKeyMonitor records keystrokes on Android phones and iPhones, including words typed and texts pasted on the monitored devices.
